How To Make Tarragon Tomato Soup
A comforting and flavorful soup packed with fresh tarragon and ripe tomatoes.
Serves:
Ingredients
- 2 tablespoons of olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 large tomatoes, peeled and chopped
- 4 cups of chicken broth
- 2 tablespoons of chopped fresh tarragon
- 2 tablespoons of honey
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until fragrant and translucent.

Add the chopped tomatoes to the pot and cook until they start to break down and release their juices.

Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for 10-15 minutes.

Stir in the fresh tarragon and honey. Simmer for another 5 minutes.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and puree in batches.

Season with salt and pepper to taste. Serve hot.
