Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 large carrots, peeled and chopped
  • 1 can white beans, drained and rinsed
  • 4 cups vegetable broth
  • 2 tbsp fresh tarragon, chopped
  • Salt and pepper, to taste
  • Optional toppings: Greek yogurt, fresh tarragon leaves

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the chopped carrots and cook for another 5 minutes.

  3. Add the white beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the carrots are tender.

  4. Use an immersion blender or transfer the mixture to a blender, and blend until smooth.

  5. Stir in the fresh tarragon, and season with salt and pepper to taste.

  6. Serve hot, topped with a dollop of Greek yogurt and fresh tarragon leaves, if desired.
