How To Make Lemon sole with crab & tarragon butter sauce

Ingredients
- 4 lemon sole fillets
- 200g crabmeat
- 4 tbsp butter
- 1 tbsp fresh tarragon, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Place the lemon sole fillets on a baking tray lined with parchment paper and season with salt and pepper.

Bake the fillets in the preheated oven for 10-12 minutes, or until cooked through.

In a small saucepan, melt the butter over low heat.

Add the crabmeat and tarragon to the melted butter and stir well to combine.

Cook the crab and tarragon butter sauce for 2-3 minutes, until heated through.

Remove the lemon sole fillets from the oven and pour the crab and tarragon butter sauce over the top.

Squeeze the lemon juice over the fillets.

Serve the lemon sole with crab and tarragon butter sauce with your choice of sides.
