  • 1 cup couscous
  • 1 ¼ cups boiling water
  • ½ cup chopped fresh parsley
  • ½ cup crumbled feta cheese
  • ¼ cup sliced almonds
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix couscous, boiling water, and olive oil. Cover and let sit for 10 minutes.

  2. Fluff couscous with a fork and mix in parsley, feta cheese, sliced almonds, lemon juice, salt, and pepper.

  3. Serve and enjoy!
