Ingredients

  • 1 cup couscous
  • 1 ½ cups vegetable broth
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • ½ cup cherry tomatoes, halved
  • ¼ cup feta cheese, crumbled
  • ¼ cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a saucepan, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes, then fluff with a fork.

  3. In a large bowl, combine the sliced bell peppers, zucchini, and red onion. Drizzle with olive oil and sprinkle with garlic powder, dried basil, salt, and pepper. Toss to coat the vegetables evenly.

  4. Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 20-25 minutes, until tender and slightly charred.

  5. In a serving bowl, combine the cooked couscous, roasted vegetables, cherry tomatoes, feta cheese, and fresh parsley. Mix well.

  6. Serve the roasted veg and couscous salad as a side dish or a light lunch. Enjoy!
