  • 1 head of cauliflower, chopped into florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. In a food processor, pulse cauliflower florets until they resemble rice.

  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1-2 minutes.

  3. Add cauliflower rice to the skillet and cook for 5-7 minutes, stirring occasionally.

  4. Add chopped parsley and continue cooking for another 2-3 minutes.

  5. Season with salt and pepper to taste, then serve hot.
