- 4 pitta bread
- 1 cup cooked couscous
- 1 cup cooked chickpeas
- 1 red bell pepper, sliced
- 1 small red onion, sliced
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp ground cumin
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese (optional)
Instructions

Preheat the grill or stovetop griddle pan.

Cut the pitta breads in half, creating a pocket.

In a large bowl, combine the cooked couscous, chickpeas, red bell pepper, red onion, parsley, mint, lemon juice, olive oil, cumin, salt, and pepper. Mix well.

Open each pitta pocket and stuff it with the couscous mixture. Press down lightly to fill evenly.

Grill the pittas on the preheated grill or griddle pan for 2-3 minutes on each side, until warmed through and slightly toasted.
