Ingredients

  • 1 cup couscous
  • 1 ¼ cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, thinly sliced
  • ¼ cup fresh mint leaves, chopped
  • ¼. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.

  • In a large bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, mint, parsley, and feta cheese.

  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour the dressing over the couscous mixture and toss to combine.

  • Serve immediately or refrigerate for a few hours to let the flavors meld. Enjoy!
