Ingredients

  • 1 cup couscous
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the couscous according to the package instructions. Fluff with a fork and let it cool.

  2. In a large bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, parsley, mint, Kalamata olives, and feta cheese.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve immediately or refrigerate for a few hours to allow the flavors to meld together.
