How To Make Tangy Couscous Salad

Ingredients
- 1 cup couscous
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Cook the couscous according to the package instructions. Fluff with a fork and let it cool.

In a large bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, parsley, mint, Kalamata olives, and feta cheese.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
