Ingredients

  • 1 cup cooked couscous
  • 1/2 cup crumbled feta cheese
  • 2 green onions, chopped
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 1/4 cup vegetable oil, for frying

Instructions

  1. In a large bowl, combine the cooked couscous, feta cheese, green onions, parsley, cumin, paprika, salt, and pepper. Mix well.

  2. Stir in the flour until the mixture is well combined and holds together.

  3. Shape the mixture into small patties or balls, about 2 tablespoons each.

  4. Heat the vegetable oil in a large skillet over medium heat. Fry the fritters in batches for about 3-4 minutes on each side, until golden brown and crispy.

  5. Drain the fritters on a paper towel-lined plate.
