Ingredients

  • 4 cups mixed winter roots (such as carrots, parsnips, and turnips), peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • 2 tablespoons melted butter
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Boil the mixed winter roots in a large pot of salted water until tender, about 15-20 minutes. Drain well.

  2. Return the cooked roots to the pot and add the butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper.

  3. In a separate small bowl, combine the breadcrumbs, melted butter, Parmesan cheese, and chopped parsley.

  4. Preheat the broiler in your oven. Transfer the mashed roots to a baking dish and sprinkle the breadcrumb mixture evenly over the top.

  5. Place the dish under the broiler for about 5 minutes or until the crumbs are golden and crispy.
