How To Make Goose and Root Vegetable Roast Recipe

Ingredients
- 1 goose (4-5 lb)
- 1 lb root vegetables (carrots, parsnips, turnips), peeled and chopped
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- Salt and pepper to taste

Preheat oven to 375°F.

Season goose with salt, pepper, and dried rosemary. Set aside.

In a large roasting pan, combine chopped root vegetables, onions, garlic cloves, and olive oil. Toss well to coat.

Place seasoned goose on top of the vegetables in the roasting pan.

Roast in preheated oven for 2 hours, or until the internal temperature of the goose registers 165°F on an instant-read thermometer.
