Ingredients

  • 2 cups potatoes, peeled and cubed
  • 2 cups carrots, peeled and sliced
  • 2 cups parsnips, peeled and sliced
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt and pepper, to taste

Instructions

  1. In a large pot, add potatoes, carrots, parsnips, and minced garlic. Fill with water until vegetables are covered.

  2. Bring the pot to a boil and cook until vegetables are tender, about 15-20 minutes.

  3. Drain the vegetables and return them to the pot.

  4. Add butter and milk to the pot and mash the vegetables until smooth and creamy.

  5. Season with salt and pepper to taste.
