Ingredients

  • 8 oz elbow macaroni
  • 2 cups wild mushrooms, sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1/4 cup breadcrumbs (optional)
  • Fresh parsley, for garnish

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside.

  2. In a large skillet, melt the butter over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are golden brown and tender.

  3. Sprinkle the flour over the mushrooms and stir to coat. Gradually pour in the milk, stirring constantly to avoid lumps. Cook until the mixture thickens.

  4. Remove the skillet from heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.

  5. Add the cooked macaroni to the skillet and stir until well coated with the cheese sauce.

  6. If desired, transfer the mac ‘n’ cheese to a baking dish and sprinkle with breadcrumbs. Bake in a preheated oven at 350°F (175°C) for about 15 minutes or until golden and bubbly.

  7. Garnish with fresh parsley before serving.
