Ingredients

  • 2 cups wild mushrooms, sliced
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups vegetable broth
  • 1/2 cup Madeira wine
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt butter over medium heat. Add mushrooms and cook until soft and slightly browned.

  2. Sprinkle flour over the mushrooms and stir to coat. Cook for 1-2 minutes.

  3. Slowly pour in the vegetable broth, stirring constantly to avoid lumps.

  4. Add the Madeira wine and dried thyme. Bring to a simmer and cook for 10-15 minutes, until the gravy thickens.

  5. Season with salt and pepper to taste. Remove from heat and serve.
