Ingredients

  • 200g all-purpose flour
  • 1 tsp baking powder
  • 150g unsalted butter, softened
  • 150g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 60ml Madeira wine

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a loaf tin with parchment paper.

  2. In a bowl, whisk together the flour and baking powder. Set aside.

  3. In a separate bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually mix in the flour mixture, alternating with the Madeira wine, until well combined.

  6. Pour the batter into the prepared loaf tin and smooth the top with a spatula.

  7. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
