How To Make Chocolate & Walnut Pavlova with Madeira & Tangerines

Ingredients
- 4 egg whites
- 1 cup of granulated sugar
- 1 tablespoon of cornstarch
- 1 teaspoon of white vinegar
- 1/4 cup of cocoa powder
- 1 cup of heavy cream
- 1/4 cup of powdered sugar
- 1/2 cup of chopped walnuts
- 2 tangerines, peeled and segmented
- 2 tablespoons of Madeira wine
Instructions

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean, dry bowl, beat the egg whites until stiff peaks form.

Gradually add the sugar, cornstarch, vinegar, and cocoa powder to the egg whites, and continue to beat until glossy and thick.

Spoon the mixture onto the prepared baking sheet, forming a large round pavlova shape. Smooth the top and create a hollow in the center.

Bake in the preheated oven for 1 hour, then turn off the oven and let the pavlova cool completely inside.

In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.

Carefully transfer the cooled pavlova to a serving plate. Fill the hollow center with the whipped cream.

Sprinkle the chopped walnuts over the whipped cream.

Arrange the tangerine segments on top of the walnuts.

Drizzle the Madeira wine over the tangerines.
