How To Make Cauliflower, Squash & Orzo Gratin

Ingredients
- 2 cups cauliflower florets
- 2 cups butternut squash, peeled and diced
- 1 cup orzo pasta
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 375°F (190°C).

In a large pot, bring water to a boil and cook the cauliflower and squash until tender, about 5 minutes. Drain and set aside.

Cook the orzo in a separate pot according to package instructions. Drain and set aside.

In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth and cook for 1 minute.

Gradually whisk in the milk and bring to a simmer. Cook until the sauce thickens, about 5 minutes.

Remove the saucepan from the heat and stir in the cheddar cheese until melted. Season with nutmeg, salt, and pepper.

In a baking dish, combine the cooked cauliflower, squash, and orzo. Pour the cheese sauce over the mixture and stir to combine.

Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.

Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
