How To Make Cauliflower, Squash & Orzo Gratin

  • 2 cups cauliflower florets
  • 2 cups butternut squash, peeled and diced
  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


  1. Preheat the oven to 375°F (190°C).

  2. In a large pot, bring water to a boil and cook the cauliflower and squash until tender, about 5 minutes. Drain and set aside.

  3. Cook the orzo in a separate pot according to package instructions. Drain and set aside.

  4. In a saucepan, melt the butter over medium heat. Whisk in the flour until smooth and cook for 1 minute.

  5. Gradually whisk in the milk and bring to a simmer. Cook until the sauce thickens, about 5 minutes.

  6. Remove the saucepan from the heat and stir in the cheddar cheese until melted. Season with nutmeg, salt, and pepper.

  7. In a baking dish, combine the cooked cauliflower, squash, and orzo. Pour the cheese sauce over the mixture and stir to combine.

  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.

  9. Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley.
