Ingredients

  • 8 rice paper sheets
  • 1 medium carrot, julienned
  • 1 medium cucumber, julienned
  • 1 red bell pepper, julienned
  • 1 cup bean sprouts
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh basil leaves
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil

Instructions

  1. Fill a large bowl with warm water. Dip one rice paper sheet into the water until it becomes pliable.

  2. Place the rice paper on a clean surface and arrange a small portion of carrot, cucumber, bell pepper, bean sprouts, mint, cilantro, and basil in the center.

  3. Fold the rice paper over the filling, tucking in the sides, and roll tightly to form a parcel. Repeat with the remaining ingredients.

  4. In a small bowl, whisk together soy sauce, hoisin sauce, lime juice, and sesame oil to make the dipping sauce.

  5. Serve the Vietnamese Veg Parcels with the dipping sauce on the side.
