Ingredients

  • 2 cups grated vegetables (carrots, zucchini, bell peppers)
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh herbs (parsley, basil, cilantro)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine the grated vegetables, cooked quinoa, breadcrumbs, chopped herbs, minced garlic, cumin, paprika, salt, and black pepper. Mix well until everything is evenly combined.

  3. Shape the mixture into golf ball-sized balls and place them on the prepared baking sheet.

  4. Drizzle the olive oil over the balls, then bake in the preheated oven for 20-25 minutes, or until the balls are golden brown and cooked through.

  5. Serve the veggie ‘forcemeat’ balls as an appetizer with your favorite sauce or as a topping for salads, wraps, or sandwiches.
