  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large baking dish, combine the sweet potato, carrots, Brussels sprouts, red bell pepper, onion, and garlic.

  3. Drizzle with olive oil and sprinkle with rosemary, thyme, salt, and pepper. Toss to coat evenly.

  4. Roast in the preheated oven for 40-45 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
