How To Make Vegetarian Low Carb Stuffed Bell Peppers Recipe

Colorful bell peppers filled with a delicious low carb stuffing in this vegetarian dish.

Ingredients

  • 4 large bell peppers, cut in half and seeded
  • 1 cup cooked quinoa
  • 1 cup chopped cauliflower
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 cup crumbled feta cheese
  • 1 tsp each of dried oregano, thyme, and basil
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a pan over medium heat and sauté onion and garlic until fragrant.

  3. Add chopped cauliflower and sauté for another 3-4 minutes.

  4. Add cooked quinoa, dried herbs, salt, and pepper and mix well.

  5. Stuff the pepper halves with this mixture and place on a baking sheet.

  6. Bake for 30-35 minutes.

  7. Top with fresh parsley and crumbled feta cheese before serving.
