How To Make Vegetarian Tofu Scramble Recipe

A delicious vegan breakfast dish made with tofu, veggies and spices.

Serves:

Ingredients

  • 1 block of firm tofu, drained and mashed
  • 1 tbsp of olive oil
  • 1/2 onion, finely chopped
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 tsp of garlic powder
  • 1/2 tsp of cumin powder
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat up a skillet with olive oil over medium-high heat.

  2. Add onion and cook for 2 minutes until it becomes translucent.

  3. Add diced bell peppers and sauté it for another 2-3 minutes until they are tender.

  4. Add garlic powder, cumin powder, salt and pepper and stir well.

  5. Add mashed tofu and stir to combine with the veggies.

  6. Cook for 5-7 minutes, stirring frequently, until tofu is golden brown and heated through.

  7. Garnish with fresh parsley or cilantro and serve hot.
