Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1/2 cup tofu, diced
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 1/4 cup roasted peanuts, chopped
  • 2 green onions, sliced
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp tamarind paste
  • 1 lime, cut into wedges
  • Fresh cilantro, for garnish

Instructions

  1. Cook rice noodles according to package instructions. Drain and set aside.

  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add minced garlic and diced tofu. Stir-fry for 2 minutes.

  3. Push the tofu to one side of the pan and pour beaten eggs into the other side. Scramble the eggs until cooked.

  4. Add cooked noodles to the pan and stir-fry for 2 minutes.

  5. Add bean sprouts, chopped peanuts, and sliced green onions. Stir-fry for another 2 minutes.

  6. In a small bowl, mix together fish sauce, soy sauce, sugar, and tamarind paste. Pour the sauce over the noodles and toss to coat evenly.

  7. Serve hot with lime wedges and garnish with fresh cilantro.
