How To Make Phat Thai

Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 1 cup shrimp, peeled and deveined
- 1 cup tofu, diced
- 2 cloves garlic, minced
- 1 shallot, thinly sliced
- 1 cup bean sprouts
- 2 tbsp fish sauce
- 2 tbsp tamarind paste
- 1 tbsp sugar
- 1/4 cup crushed peanuts
- 2 green onions, chopped
- 1 lime, cut into wedges
- Fresh cilantro, for garnish
Instructions

Soak the rice noodles in warm water for 15 minutes until softened. Drain and set aside.

Heat oil in a large pan or wok over medium heat. Add garlic and shallot, and cook until fragrant.

Add shrimp and tofu to the pan, and stir-fry until shrimp turns pink and tofu is lightly browned.

Push shrimp and tofu to one side of the pan, and crack eggs into the empty space. Scramble the eggs until cooked through.

Add the drained rice noodles to the pan, followed by fish sauce, tamarind paste, and sugar. Stir well to coat the noodles and evenly distribute the sauce.

Add bean sprouts and toss everything together. Cook for an additional 2-3 minutes until the noodles are heated through.

Remove from heat and sprinkle with crushed peanuts and green onions. Serve hot with lime wedges and garnish with fresh cilantro.
