How To Make Vegan Nuggets

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 2 cups of cooked chickpeas
  • 1/2 cup of rolled oats
  • 1/4 cup of nutritional yeast
  • 1/4 cup of breadcrumbs
  • 2 tablespoons of ground flaxseed mixed with 6 tablespoons of water
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of dried oregano
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a food processor, combine the cooked chickpeas, rolled oats, nutritional yeast, breadcrumbs, flaxseed mixture, garlic powder, onion powder, paprika, dried oregano, salt, and pepper. Pulse until well combined and the mixture is slightly sticky.

  3. Shape the mixture into small nugget shapes using your hands or a cookie scoop. Place them on the prepared baking sheet.

  4. Lightly spray or brush the nuggets with cooking spray or oil to help them brown in the oven.

  5. Bake for 20-25 minutes, flipping halfway through, until the nuggets are crispy and golden brown.

  6. Serve hot with your favorite dipping sauce.
