How To Make Twice-Baked Potatoes with Goat’s Cheese

- 4 large potatoes
- 1/2 cup goat’s cheese
- 1/4 cup milk
- 2 tablespoons butter
- Salt, to taste
- Black pepper, to taste
- Chives, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean and prick them several times with a fork. Place them on a baking sheet and bake for 1 hour until tender.

Remove the potatoes from the oven and let them cool slightly. Cut off the top portion of each potato and scoop out the flesh into a bowl, leaving a thin layer of potato inside the skin.

Mash the potato flesh with a fork. Add goat’s cheese, milk, butter, salt, and black pepper. Mix until well combined and creamy.

Stuff the mixture back into the potato skins, mounding it slightly. Place the filled potatoes back on the baking sheet.

Bake for an additional 15 minutes until the tops are golden and slightly crispy.

Garnish with chopped chives and serve hot.
