Ingredients

  • 4 large russet potatoes
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese, divided
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the potatoes and prick them with a fork. Bake them in the oven for 40 minutes, or until tender.

  3. Remove the potatoes from the oven and let them cool slightly, then cut them in half lengthwise.

  4. Scoop out the flesh of the potatoes into a large bowl, leaving a thin shell intact.

  5. Mash the potatoes with the milk, butter, and sour cream until smooth. Stir in 3/4 cup of the shredded cheddar cheese and the green onions. Season with salt and pepper to taste.

  6. Spoon the mashed potato mixture back into the potato shells, evenly dividing it among them. Top with the remaining 1/4 cup of shredded cheddar cheese.

  7. Place the filled potato halves on a baking sheet and bake for an additional 15 minutes, until the cheese is melted and golden brown.

  8. Serve the twice-baked mashed potatoes hot and enjoy!
