How To Make Truffled Crushed Potatoes

Ingredients
- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 tablespoon truffle oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Chopped fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

Place the baby potatoes in a large pot and cover with water. Bring to a boil and cook for 15-20 minutes, until tender.

Drain the potatoes and transfer them to a baking sheet. Use the bottom of a glass or a fork to lightly crush each potato.

Drizzle the olive oil and truffle oil over the potatoes. Sprinkle with minced garlic, salt, and black pepper.

Toss everything together to coat the potatoes evenly.

Roast the potatoes in the preheated oven for 20-25 minutes, until golden and crispy.
