How To Make Crushed Potatoes with Rocket & Lemon

Ingredients
- 1.5 pounds of small baby potatoes
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tablespoons of olive oil
- 1 garlic clove, minced
- Salt and pepper, to taste
- 2 cups of fresh rocket leaves
Instructions

Wash the baby potatoes and place them in a large pot. Cover with cold salted water and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender.

While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, salt, and pepper.

Drain the cooked potatoes and let them cool for a few minutes. Once they are cool enough to handle, gently crush them using the back of a spoon or fork.

In a large bowl, combine the crushed potatoes with the dressing. Toss to coat the potatoes evenly.

Add the fresh rocket leaves and gently toss until well combined.
