How To Make Tomato, Pepper & Bean One Pot Recipe

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 4 tomatoes, diced
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper, to taste
- Chopped fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until translucent.

Add diced bell peppers and cook for 3-4 minutes until slightly softened.

Stir in diced tomatoes, kidney beans, black beans, cumin, paprika, and chili powder. Season with salt and pepper.

Cover the pot and simmer for 20-25 minutes, allowing the flavors to meld together.

Serve hot, garnished with chopped fresh cilantro.
