Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 4 tomatoes, diced
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until translucent.

  2. Add diced bell peppers and cook for 3-4 minutes until slightly softened.

  3. Stir in diced tomatoes, kidney beans, black beans, cumin, paprika, and chili powder. Season with salt and pepper.

  4. Cover the pot and simmer for 20-25 minutes, allowing the flavors to meld together.

  5. Serve hot, garnished with chopped fresh cilantro.
