Ingredients

  • 2 large sweet potatoes, peeled and grated
  • 1 can of black beans, rinsed and drained
  • 1/2 cup bread crumbs
  • 1/4 cup diced red onion
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 avocados, diced
  • 1/2 cup fresh basil leaves, chopped
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the grated sweet potatoes, black beans, bread crumbs, red onion, cumin, paprika, garlic powder, salt, and black pepper. Mix well.

  3. Shape the mixture into 4 patties and place them on the prepared baking sheet.

  4. Bake the patties for 20-25 minutes, or until they are golden brown and crispy.

  5. In a separate bowl, combine the diced avocados, chopped basil, and lime juice. Toss gently to combine.

  6. Serve the sweet potato burgers on buns, topped with the avocado and basil salsa.
