How To Make Noodles with Crispy Chilli Oil Eggs
This dish features springy noodles topped with crispy eggs cooked in fragrant chilli oil.
Serves:
Ingredients
- 8 oz noodles
- 4 eggs
- 3 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp chilli oil
- 1 tsp sugar
- 1 tsp sesame oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 green onions, sliced
Instructions

Cook noodles according to package instructions. Drain and set aside.

In a bowl, whisk together eggs, salt, and garlic powder.

Heat 1 tbsp vegetable oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook until crispy. Flip and cook the other side. Remove from heat and set aside.

In the same skillet, heat the remaining 2 tbsp vegetable oil. Add soy sauce, chilli oil, sugar, sesame oil, and black pepper. Stir fry for 1-2 minutes.

Add the cooked noodles to the skillet and toss to coat in the sauce.

Divide the noodles among 4 serving plates. Top each plate with a crispy egg and garnish with green onions.
