  • 8 eggs
  • 1/4 cup spinach, chopped
  • 1/4 cup mushrooms, sliced
  • 1/4 cup bell peppers, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, whisk together the eggs, salt, and black pepper.

  2. Heat olive oil in a non-stick skillet over medium heat.

  3. Add the spinach, mushrooms, and bell peppers to the skillet and sauté for 2-3 minutes until softened.

  4. Pour the egg mixture into the skillet and let it cook for 1 minute until the edges start to set.

  5. Gently stir the eggs, incorporating the vegetables evenly.

  6. Add the cherry tomatoes and feta cheese, and continue cooking for another 2-3 minutes until the eggs are cooked through.

  7. Remove from heat and serve hot.
