Ingredients

  • 8 sweet peppers
  • 1 cup cooked quinoa
  • 1/2 cup diced tomatoes
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup shredded cheese
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut off the tops of the sweet peppers and remove the seeds and membranes.

  3. In a bowl, combine the cooked quinoa, diced tomatoes, black beans, cilantro, shredded cheese, garlic powder, cumin, salt, and pepper.

  4. Stuff each sweet pepper with the quinoa mixture, pressing it down gently.

  5. Place the stuffed peppers on a baking sheet and bake in the preheated oven for 25 minutes, or until the peppers are tender and the filling is heated through.

  6. Serve hot and enjoy!
