Ingredients

  • 1 medium zucchini
  • 1 medium bell pepper
  • 1 medium tomato
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh herbs (such as basil, parsley, or oregano)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.

  2. Slice the zucchini, bell pepper, and tomato in half lengthwise. Scoop out the seeds and pulp from the bell pepper and tomato halves.

  3. In a bowl, combine the breadcrumbs, Parmesan cheese, chopped herbs, olive oil, salt, and pepper.

  4. Spoon the breadcrumb mixture into the hollowed out vegetables, pressing it down gently.

  5. Place the stuffed vegetables on the grill, close the lid, and cook for about 10-15 minutes or until the vegetables are tender and the breadcrumbs are golden brown.

  6. Remove from the grill and let cool slightly before serving.
