How To Make Papas Rellenas (Fried Stuffed Potatoes)

Ingredients

  • 4 large potatoes
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • Vegetable oil for frying

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Wash and peel the potatoes. Cut them in half and place them in a pot of salted water. Boil until tender, about 15-20 minutes. Drain and set aside.

  3. Meanwhile, in a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, cumin, paprika, salt, and pepper. Cook until the onion is translucent and the spices are fragrant, about 5 minutes. Remove from heat and let it cool.

  4. Once cooled, take a potato half and scoop out the center, creating a hollow pocket. Fill the pocket with a spoonful of the ground beef mixture. Press the potato halves back together, covering the filling completely. Repeat with the remaining potato halves.

  5. Roll the stuffed potatoes in bread crumbs, making sure they are completely coated.

  6. Heat vegetable oil in a deep frying pan or pot over medium-high heat. Fry the stuffed potatoes until golden brown, turning occasionally to ensure even frying. This should take about 5-7 minutes. Remove from oil and place on a paper towel-lined plate to drain excess oil.

  7. Preheat the oven to 350°F (175°C). Place the fried stuffed potatoes on a baking sheet and bake for an additional 10 minutes to ensure they are heated through.

  8. Serve the papas rellenas hot and enjoy!
