Ingredients

  • 4 cucumbers
  • 1 cup bread crumbs
  • 1/2 cup grated cheese
  • 1/4 cup chopped herbs (such as parsley and dill)
  • 2 cloves of garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • Vegetable oil, for frying

Instructions

  1. Slice the cucumbers in half lengthwise. Scoop out the seeds and create a cavity in each cucumber half.

  2. In a bowl, combine the bread crumbs, grated cheese, chopped herbs, minced garlic, salt, and black pepper. Mix well.

  3. Stuff each cucumber half generously with the filling mixture.

  4. Place the all-purpose flour and beaten eggs in separate bowls.

  5. Dip each stuffed cucumber half first in the flour, then in the beaten eggs, and finally in the flour again.

  6. Heat vegetable oil in a frying pan over medium heat.

  7. Fry the stuffed cucumbers until golden brown on all sides, about 2-3 minutes per side.

  8. Place the fried stuffed cucumbers on a paper towel-lined plate to drain excess oil.

  9. Serve hot as an appetizer or side dish.
