Ingredients

  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil, divided
  • 4 tomatoes, sliced in half
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat a grill or griddle pan over medium-high heat.

  2. Toss the green beans with 1 tablespoon of olive oil and season with salt and pepper.

  3. Grill the green beans for 4-5 minutes, or until slightly charred and tender. Remove from heat and set aside.

  4. In a separate bowl, toss the halved tomatoes with the remaining olive oil, minced garlic, and balsamic vinegar.

  5. Grill the tomatoes cut-side down for 3-4 minutes, or until slightly softened and grill marks start to appear. Remove from heat.

  6. Arrange the green beans on a serving dish and top with the grilled tomatoes.

  7. Season with additional salt and pepper if desired.

  8. Serve hot and enjoy!
