Serves:

Ingredients

  • 2 cups of brown rice
  • 4 cups of broccoli florets
  • 1 cup of sliced bell peppers
  • 1 cup of sliced carrots
  • 1 cup of sliced mushrooms
  • 1/4 cup of low-sodium soy sauce
  • 2 tablespoons of sesame oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 1/4 teaspoon of red pepper flakes (optional)

Instructions

  1. Cook brown rice according to package instructions.

  2. In a large skillet or wok, heat sesame oil over medium heat.

  3. Add minced garlic, ginger, and red pepper flakes (if using) to the skillet and cook for 1-2 minutes until fragrant.

  4. Add sliced bell peppers, carrots, and mushrooms to the skillet and stir-fry for 3-4 minutes until slightly tender.

  5. Add broccoli florets to the skillet and cook for an additional 2-3 minutes until broccoli is bright green and crisp-tender.

  6. Stir in cooked brown rice and soy sauce, and cook for another 2-3 minutes until everything is well combined and heated through.

  7. Serve stir-fry hot and enjoy!
