How To Make Vegetarian Pho

Ingredients
- 8 cups vegetable broth
- 4 cups water
- 1 cinnamon stick
- 4 cloves
- 2 star anise
- 1 tablespoon grated fresh ginger
- 3 garlic cloves, minced
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon brown sugar
- 8 ounces rice noodles
- 1 cup sliced mushrooms
- 1 cup sliced bell peppers
- 1 cup bean sprouts
- 1 cup sliced tofu
- 1 cup fresh herbs (cilantro, basil, mint)
- 1 lime, cut into wedges
- Sriracha sauce, for serving
- Hoisin sauce, for serving
Instructions

In a large pot, combine the vegetable broth, water, cinnamon stick, cloves, star anise, ginger, garlic, soy sauce, hoisin sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 30 minutes.

Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.

Strain the broth and discard the solids. Return the broth to the pot and bring to a simmer.

Add the mushrooms, bell peppers, bean sprouts, and tofu to the broth and simmer for 5 minutes, until vegetables are tender.

To serve, divide the rice noodles among 4 bowls. Ladle the broth and vegetables over the noodles. Top with fresh herbs and a squeeze of lime juice. Serve with Sriracha sauce and hoisin sauce on the side.
