Ingredients

  • 500g prawns, peeled and deveined
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup polenta
  • 3 cups water
  • 1 cup corn kernels, drained
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter

Instructions

  1. In a bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper.

  2. Toss prawns in the spice mixture until well coated.

  3. Heat olive oil in a large skillet over medium heat. Add prawns and cook for 3-4 minutes per side until pink and cooked through. Remove from skillet and set aside.

  4. In the same skillet, add water and bring to a boil. Gradually whisk in the polenta and cook, stirring frequently, for about 10 minutes or until thickened.

  5. Stir in the corn kernels, Parmesan cheese, and butter until well combined and creamy.

  6. Serve the polenta on a plate and top with the cooked prawns.

  7. Enjoy hot!
