How To Make Sourdough Hot Cross Buns

Ingredients

  • 1 cup active sourdough starter
  • 1/4 cup granulated sugar
  • 1/4 cup melted butter
  • 1/2 cup warm milk
  • 1 egg
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp cloves
  • 1/4 cup raisins or currants
  • cross topping:
  • 1/4 cup all-purpose flour
  • 2 tbsp water
  • glaze:
  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. In a large bowl, mix together sourdough starter, sugar, melted butter, warm milk, and egg.

  2. Add flour, salt, cinnamon, nutmeg, allspice, and cloves. Mix until a soft dough forms.

  3. Knead the dough for about 5 minutes until smooth and elastic. Then, fold in the raisins or currants.

  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1-2 hours until doubled in size.

  5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  6. Divide the dough into 8 equal pieces. Shape each piece into a smooth ball and place on the prepared baking sheet.

  7. In a small bowl, mix together flour and water to make a thick paste for the cross topping. Transfer the paste to a piping bag or a Ziploc bag with the corner snipped off. Pipe a cross over each bun.

  8. Bake for 20-25 minutes or until golden brown.

  9. In the meantime, prepare the glaze by mixing powdered sugar, milk, and vanilla extract.

  10. Remove the buns from the oven and let them cool for a few minutes. Drizzle the glaze over the buns while they are still warm.

  11. Serve the sourdough hot cross buns fresh and enjoy!
