How To Make Sourdough Hot Cross Buns

Ingredients
- 1 cup active sourdough starter
- 1/4 cup granulated sugar
- 1/4 cup melted butter
- 1/2 cup warm milk
- 1 egg
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/4 cup raisins or currants
- cross topping:
- 1/4 cup all-purpose flour
- 2 tbsp water
- glaze:
- 1/2 cup powdered sugar
- 1 tbsp milk
- 1/2 tsp vanilla extract
Instructions

In a large bowl, mix together sourdough starter, sugar, melted butter, warm milk, and egg.

Add flour, salt, cinnamon, nutmeg, allspice, and cloves. Mix until a soft dough forms.

Knead the dough for about 5 minutes until smooth and elastic. Then, fold in the raisins or currants.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1-2 hours until doubled in size.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Divide the dough into 8 equal pieces. Shape each piece into a smooth ball and place on the prepared baking sheet.

In a small bowl, mix together flour and water to make a thick paste for the cross topping. Transfer the paste to a piping bag or a Ziploc bag with the corner snipped off. Pipe a cross over each bun.

Bake for 20-25 minutes or until golden brown.

In the meantime, prepare the glaze by mixing powdered sugar, milk, and vanilla extract.

Remove the buns from the oven and let them cool for a few minutes. Drizzle the glaze over the buns while they are still warm.
