How To Make Orange, Carrot & Mint Soup

- 4 large oranges, juiced
- 4 medium carrots, peeled and chopped
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 4 cups of vegetable broth
- 1/4 cup of fresh mint leaves
- Salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until they become translucent.

Add the chopped carrots to the pot and cook for about 5 minutes, until they start to soften.

Pour in the vegetable broth and orange juice. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, until the carrots are tender.

Remove the pot from heat and allow the soup to cool slightly. Using an immersion blender or regular blender, puree the mixture until smooth.

Return the soup to the pot and stir in the fresh mint leaves. Season with salt and pepper to taste.
