  • 250g cheddar cheese, grated
  • 1/4 cup ale
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 4 tbsp unsalted butter, softened
  • Toasted baguette or crackers, for serving

Instructions

  1. In a mixing bowl, combine the grated cheddar cheese, ale, Dijon mustard, Worcestershire sauce, black pepper, salt, and paprika. Mix until well combined.

  2. Transfer the mixture to individual ramekins or small jars, pressing it down gently to compact it.

  3. In a small saucepan, melt the butter over low heat. Once melted, pour the melted butter over the cheese mixture in the ramekins, ensuring that the mixture is fully covered.

  4. Place the ramekins in the refrigerator and let them set for at least 2 hours, or until firm.

  5. Serve the potted cheddar with toasted baguette or crackers.
