How To Make Curried Spinach, Eggs & Chickpeas

Serves:

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tbsp curry powder
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp paprika powder
  • 1 can (400g) chickpeas, drained and rinsed
  • 200g spinach, washed and chopped
  • 4 eggs
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add diced onion and minced garlic, sauté until translucent.

  2. Add curry powder, cumin powder, turmeric powder, and paprika powder to the pan. Stir well to coat the onions.

  3. Add chickpeas to the pan and cook for 5 minutes, until they are slightly crispy.

  4. Gradually add the chopped spinach to the pan, allowing it to wilt. Cook for another 3-4 minutes until the spinach is fully cooked.

  5. Make four wells in the spinach and crack an egg into each well. Cover the pan and cook until the eggs are done to your liking (around 5-7 minutes for a soft yolk).

  6. Season with salt and pepper to taste. Garnish with fresh cilantro.

  7. Serve hot and enjoy!
