Ingredients

  • 1 sheet of frozen puff pastry, thawed
  • 2 ripe peaches, sliced
  • 1/2 cup almond meal
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the puff pastry on a floured surface and transfer it to a tart pan.

  3. In a bowl, cream together the almond meal, sugar, butter, egg, and vanilla extract until well combined.

  4. Spread the almond mixture evenly over the puff pastry.

  5. Arrange the sliced peaches on top of the almond mixture.

  6. Bake for 30-40 minutes, or until the pastry is golden and the peaches are tender.

  7. Remove from the oven and let it cool before serving.

  8. Dust with powdered sugar before serving.
