How To Make Patate in agrodolce (Sweet & sour warm potato salad)

Ingredients
- 1 kg potatoes, peeled and cut into chunks
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tbsp honey
- 1 red onion, thinly sliced
- 2 tbsp capers
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Boil the potatoes in a large pot of salted water until fork-tender. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the red onion and cook until softened.

Add the red wine vinegar, honey, and capers to the skillet. Stir well to combine.

Add the cooked potatoes to the skillet and gently toss to coat them in the sweet and sour mixture. Cook for an additional 5 minutes, until heated through.

Season with salt and pepper to taste. Garnish with fresh parsley.
