Ingredients

  • 2 large sweet potatoes, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 small tortillas
  • Optional toppings: avocado, sour cream, cilantro

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the sweet potato strips, bell peppers, and onions with olive oil, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper until well coated.

  3. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.

  4. Bake in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy.

  5. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.

  6. Serve the roasted sweet potato fajitas with warmed tortillas and your choice of optional toppings.
