How To Make Feta & Kale Loaded Sweet Potato

Ingredients
- 4 medium sweet potatoes
- 1 cup kale, chopped
- 1/2 cup crumbled feta cheese
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Pierce each sweet potato a few times with a fork. Place on a baking sheet and bake for 40 minutes, or until tender.

While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat. Add the kale and sauté for 5 minutes, or until wilted.

Cut a slit down the center of each baked sweet potato and gently push the ends to create an opening. Spoon the sautéed kale evenly into each sweet potato.

Top each sweet potato with crumbled feta cheese and sprinkle with garlic powder, salt, and pepper.

Place the stuffed sweet potatoes back in the oven for 5 minutes, or until the cheese has melted.
